आलू के फलाहारी दही बड़े (Potato Dahi Vada recipe) अन्नरहित होने के कारण इन्हे व्रत में भी बनाया जा सकता है। उड़ददाल या मूंग दाल के दही बड़े में पहले से दाल भिगोनी पड़ती है लेकिन इसमें ऐसा कुछ नहीं करना पड़ता। ये बहुत ही आसानी से बिना किसी झंझंट के बन जाते है।
उबले हुए आलू को मेस करके कुटटू का आटा और मसाले मिलाकर तुरंत ही इन्हे बनाया जा सकता है। स्वाद में चटपटे बहुत ही लाज़बाब होने के कारण बच्चे- बड़े सभी को बहुत पसंद आते हैं। तो चलिए फलाहारी दही बड़े की रेसिपी को शुरू करते है।

उबले हुए आलू – 250 ग्राम (4-5)
कुटटू का आटा – 1/2 कप
काली मिर्च पाउडर – 1/2 चम्मच
सेंधा नमक – 1/2 चम्मच (व्रत का नमक )
किशमिश – 20-25
हरी मिर्च – 2 बारीक कटी हुई

सर्व करने के लिए सामग्री –
भुना हुआ जीरा
मीठी दही
हरी चटनी
काला नमक
काली मिर्च पाउडर – छिड़कने के लिए
व्रत स्पेशल आलू के फलाहारी दही बड़े बनाने की विधि – Method of making Potato Dahi Vada recipe – How to make Aalu Ke Falahari Dahi Bhalle :
किसी भी एक बड़े बर्तन में आलू को अच्छे से मसल लीजिये। कुटटू का आटा, काली मिर्च, सेंधा नमक भी डालकर मिला लीजिये।सभी चीज़ों को अच्छे से मिक्स कर लीजिये।

इधर एक कड़ाही में तलने के लिए तेल गरम होने रख दीजिये तेल गरम होता है तब तक भल्ले बनाकर तैयार कर लीजिये।
नीबू के आकर जितना मिश्रण लीजिये चिकना करके हथेलियों से थोड़ा सा प्रेश कीजिये और इसके बीचों बीच २ किशमिश,एक दो हरी मिर्च कटी हुई रखकर गोल कर दीजिये।गोल करने के बाद फिर से थोड़ा सा प्रेश करके चपटा कर लीजिये।
इसी तरह सभी भल्ले बना लें।
तेल गरम होने के बाद कड़ाही में जितने भल्ले आ जाये उतने डाल दीजिये और सुनहरा होने तक उलट पलट कर फ्राई कीजिये गैस की फ्लेम मीडियम करें क्यूकि भल्ले हमें मीडियम गैस पर तलने हैं।
गोल्डन ब्राउन होने के बाद बड़े कड़ाही से भर किसी प्लेट में निकाल लीजिये। भल्ले तल कर तैयार हैं।

सर्व करना –
सर्विंग प्लेट में दो या चार बड़े रखिये। दो बड़े चम्मच या अपने टेस्ट के हिसाब से दही डाल दीजिये। एक चम्मच हरी चटनी, एक चम्मच मीठी चटनी डालिये थोड़ा सा भुना हुआ जीरा, सेंदा नमक और काली मिर्च ऊपर से छिड़क दीजिये। खाने के दही भल्ले बिल्कुल तैयार हैं।
याद रखने योग्य बातें –
दही बड़े तलने के लिए तेल अच्छे से गरम होना चाहिए। कम गरम तेल में बड़े ज्यादा तेल सोख लेते हैं और टूटने का भी डर रहता हैं।
अगर आप व्रत के लिए नहीं बना रहे हैं तो काली मिर्च की जगह लाल मिर्च, सेंदा नमक की जगह सफ़ेद नमक का इस्तेमाल कर सकते हैं।

Boiled potatoes – 250 grams (4-5)
buckwheat flour – 1/2 cup
Black Pepper Powder – 1/2 Tablespoon
Rock salt – 1/2 teaspoon (salt of fast) Raisin – 20-25
Green Chillies – 2 Finely Chopped
Content to Serve –
Roasted cumin seeds
Sweet curd
Green chutney
Black Salt
Black pepper powder – to sprinkle
Method of making Potato Dahi Bhalla – Method of making Potato Dahi Vada recipe – How to make Alu Falahari Dahi Bhalle:
1. Mash the potatoes in any large pot. Add buckwheat flour, black pepper, rock salt and mix well.
2. Mix all the ingredients well.
3. Keep oil in a pan for frying and keep it warm until the oil is heated.
4. Take lemon sized dough; Press using both palms, put some green chili pieces and raisins inside it and round it again. Give a flat shape using both palms. Make all the nuggets in the same way.
5. After the oil is heated, put as many potato balls as can fit in the pan and fry them upside down until golden brown and keep burner on medium flame.
6. Once golden brown, take out in a plate. Nuggets are fried.
Serving –
Keep two or four pieces in serving plate. Put 2 teaspoons of yogurt or according to your test. Add a spoonful green chutney, a spoonful sweet sauce, sprinkle some roasted cumin seeds, salt and black pepper over it. Potato nuggets are ready to eat.
Things to remember –
Oil should be well heated for Dahi Vada (Potato nuggets). Nuggets soak much oil if oil is not well heated.
